Sunday night’s Super Bowl gave me the perfect excuse to do what I love most: open my kitchen and cook alongside people I love. While I can’t say I was overly invested in the game itself, I was definitely counting down the minutes to Bad Bunny’s halftime performance. To say I was excited is an understatement—I was genuinely counting down every second! I even went all in and ordered Super Bowl–themed Bad Bunny shirts for the night. The Dish-Lasagna Roll Ups w/ Spinach & Garlic Herb Ricotta
Inspired by The Chutney Life
Ingredients
For the pasta, sauce, & layering
1 lb box lasagna noodles (The no-boil kind will not work for this.)
32 oz jarred pasta sauce (We used Rao's Marinara.)
Shredded mozzarella cheese
Ricotta mixture
16 oz ricotta cheese
4 green chilis, roughly chopped (We used fresh jalapeños, but only because the store didn't have serranos.)
4 cloves garlic
1 cup tightly packed cilantro
1 bunch scallions, roughly chopped
Handful of fresh basil
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
Spinach filling
2 tbsp oil
1 tbsp minced garlic
1 onion, diced
1 bell pepper, diced
1 (10 oz) bag spinach
2 tsp Italian seasoning
1 tsp crushed red chili flakes
Salt and pepper, to taste
Instructions
Cook the noodles
Bring a large pot of water to a boil and cook about 12–15 lasagna sheets according to the package directions.
Drain and return them to the pot with a little water to keep them from sticking while you prep the fillings.
Make the ricotta mixture
Add the ricotta, chilis, garlic, cilantro, scallions, basil, garlic powder, onion powder, salt, and pepper to a food processor.
Blend until smooth and well combined.
Set aside.
Prepare the spinach filling
Heat oil in a large pan over medium heat.
Add the garlic and sauté just until fragrant.
Stir in the onions and bell peppers and cook for 6–7 minutes, until softened.
Add the spinach in handfuls, letting it wilt down before adding more.
Season with Italian seasoning, crushed red chili flakes, salt, and pepper.
Cook until the spinach is fully wilted and most of the liquid has evaporated.
Remove from heat.
Prepare the sauce
Pour the jarred pasta sauce into a bowl and stir in one heaping spoonful of the ricotta mixture.
Add extra chili flakes if you like a little heat. (We did!)
Assemble the rollups
Lay the cooked lasagna noodles flat and pat them dry so the filling stays in place.
Spoon a layer of sauce across the bottom of a 9×13 baking dish.
Spread about two spoonfuls of the ricotta mixture onto each noodle, leaving a little space at the edge.
Sprinkle with mozzarella, then add a spoonful or two of the spinach mixture.
Top with a small amount of sauce and another sprinkle of mozzarella.
Starting from one end, gently roll up each noodle and place seam-side down in the baking dish.
Repeat with the remaining noodles.
Bake
Once all the rollups are nestled in the dish, pour the remaining sauce over the top and finish with a generous layer of mozzarella.
Cover and bake at 350°F for about 10 minutes, until everything is warm and melty.
The Story Behind It
When it came to the menu, I wanted something fun and exciting but simple enough to pull together while keeping one eye on the game (kinda) and the other on the clock until halftime. I landed on lasagna rollups. Anyone that knows me knows I love lasagna, but the layering can feel like a lot. Rollups are easier, more playful, and just as comforting! A throwback recipe I hadn’t made in years, inspired by The Chutney Life...I love you, girl! If you don’t follow her yet, you absolutely should—her recipes never disappoint! Paired with an immaculate snack board, caprese rollups, party samosas, and the best company, it turned into one of those nights where the food, the laughter, the music, and the little lessons that quietly crept in mattered far more than the score of any game!

Around the Table
Around the table tonight were my brother, Bhavik, and his fiancé, Sonu. I’ve always felt incredibly blessed when it comes to family. I have one older sister—who I’m certain you’ll meet in a future post—and my younger brother, Bhavik. I often tell people how lucky I feel to have not one, but two siblings, a sister and a brother, and I’ve never once felt the absence of either. Somehow, I’ve also been lucky enough to gain another sister in the process...
Sonu is one of those people who instantly feels like family. She is kind, loving, endlessly supportive—and someone who just gets me. From blending the ricotta to rolling the lasagna, there was never a dull moment in the kitchen. We share the same sense of humor, and there’s truly nothing I can’t say to her without being understood. Cooking side by side felt easy, natural, and full of laughter—the kind that sneaks up on you and reminds you how special moments like these really are.
Bhavik, on the other hand, took on a slightly different role that night. He graciously gave us our “sister time” in the kitchen—not because he wasn’t welcome, but because, of the three of us, he was the one most invested in the game and very serious about catching every commercial. I did assign him one very important job though: timekeeper. Not for the lasagna, but for the moment I was waiting for—counting down every minute until Bad Bunny took the halftime stage. Missing even a single second was simply not an option!
This night was one of those quiet reminders of just how lucky I am—grateful for the family I was born into, the sisterhood that continues to grow, and the friendships, old and new, that keep showing up in my life. Somehow, they just keep coming, and for that, I am endlessly grateful.
A Joy Worth Sharing
There was a moment in the kitchen that had all of us laughing—the kind of moment that reminds me why I love cooking with others. I’m not much of a measuring person, and this shined bright when it came time to season the ricotta. I cook by feel, by instinct, by whatever my gut tells me in the moment. So when Sonu paused mid-blend and asked, “How much garlic powder should I put in?” I shrugged and said, “I’m not sure what the recipe says… just base it on how you feel!” Without missing a beat, she smiled and said, “You’re right. I’m the same way—I measure with my heart,” before dumping in a shit ton of seasoning. I immediately widened my eyes and said, “But dang, girl!” and we both burst out laughing. She turned to Bhavik and asked what his rule was for seasoning food, and he didn’t hesitate: “If you ain’t sneezin’, it ain’t seasoned—throw in some more!” Somehow, despite measuring nothing and trusting everything, the lasagna rollups turned out incredibly flavorful—proof that cooking with your heart sometimes really does work!
Watching the halftime show later, that same idea echoed in a whole new way. Bad Bunny’s performance was joyous, vibrant, and deeply grounding. I loved the message he shared—that love is always more powerful than hate—and how clearly that theme came through in both his words and the intentional way he carried himself on stage. When he said, “Mi nombre es Benito Antonio Martínez Ocasio, y si estoy aquí hoy en el Super Bowl 60, es porque nunca, nunca dejé de creer en mí mismo—y tú también deberías creer en ti. Vales más de lo que crees,” it hit me harder than I expected. And yes, I had to Google it—because while I don’t speak Spanish fluently, thank goodness for modern technology! Still, the words, the language, the energy—it all shone through, and it was impossible not to feel it. The emphasis he placed on believing in yourself, on remembering that you’re worth more than you think, is a message I feel like we all needed to hear.
In that moment, I realized just how connected these two experiences were. Measuring with your heart in the kitchen is one thing—but in life, especially during the most adverse, overwhelming, or seemingly impossible times, it’s a reminder to do the same. Lead with your heart, choose love, trust yourself, and hold firm to your worth. Even when challenges feel heavy or outcomes are uncertain, there is power in believing in yourself and letting love guide your actions. Just like our lasagna rollups turned out beautifully without precise measurements, life has a way of rewarding those who trust themselves and approach it with heart, honesty, and a little courage.
It was a powerful, uplifting, and affirming reminder—one I know I’ll carry with me long after the music faded and my kitchen was cleaned. Moments like these, where laughter, great company, delicious food, and meaningful messages collide, are truly a joy worth sharing!
