Welcome to Cooking with Krina — I’m so happy you’re here. This is my very first post, and I couldn’t be more excited and grateful to finally kick this off!
This particular post is a reminder that something special doesn’t have to be grand. Just like in the kitchen, the best moments are often made from simple ingredients — and the most important one is always the people you’re cooking with or for!
For my pilot night, I skipped anything extravagant and leaned into ease and joy: a classic cheese board with plenty of snacks to nibble on while we sipped, yapped, and cooked the viral Trader Joe’s Dumpling Bake. Yes, you read that right — simple, flavorful, and so easy.
So let’s celebrate good food, good company, and nights that feel just right. Grab a snack and stay awhile — scroll on for the recipe, photos, and moments of joy!
The Dish
Ingredients
1 (13.5 oz) can Trader Joe's Coconut Milk
1/2 bottle Trader Joe's Red Thai Curry Sauce
3 tablespoons Trader Joe's Soyaki Sauce
3 cloves garlic, minced
1 bell pepper, chopped (any color; we used yellow)
A generous handful of fresh spinach
1 bag frozen Trader Joe's dumplings (vegetarian or chicken)
Chopped scallions, for topping
Optional toppings:
Sriracha Sauce
Trader Joe’s Crunchy Chili Onion Seasoning Blend
Chili Crunch Oil
Instructions
Preheat the oven to 350°F (175°C).
In a baking dish, whisk together the coconut milk, red Thai curry sauce, soyaki, and minced garlic.
Stir in the spinach and chopped bell peppers, then arrange the frozen dumplings in an even layer on top.
Spoon some of the sauce over the dumplings to coat them lightly.
Cover tightly with foil and bake for 35–40 minutes, until the dumplings are heated through and the sauce is bubbling.
Serve warm.
Optional: Top with crunchy chili onion seasoning, drizzle with sriracha and chili crunch oil.
The Story Behind It
Life has been a little tricky and messy lately — truly, life has been lifin’. Since the new year, I’ve been forced to slow down, take a step back, and sit with things I didn’t plan for. In the midst of it all, I found myself craving closeness and comfort, wanting nothing more than to be around my tiny circle of dear friends and family — the ones who show up, no questions asked. The truth is, I’ve wanted to start Cooking with Krina for over a year, but I never made the time. Recent events gently (and not-so-gently) pushed me to fill my days with people I love and things that bring me joy, helping me focus my energy on the brightness instead of the heaviness. Cooking something simple alongside two of my friends who are so near and dear to my heart — who never fail to uplift me, share their strength, and brighten my world — felt like the perfect way to begin this journey!

Around the Table
Around the table tonight were Jess and Virginia, two friends I met through my work — one of the quiet blessings of a profession that brings truly beautiful people into my life. Though they’ve both since transitioned into a new field, our connection has only grown stronger. This evening felt less about cooking and more about catching up on the big shifts we’re all navigating, offering support, and finding comfort in simply being together again.
Somewhere between chopping and stirring, I found myself thinking about how proud I am of these two strong, thoughtful women, and how grateful I am to walk alongside them in this season of life. The world has a way of planting certain people into your story for a reason, and even though our friendship is fairly new, I know with certainty that these two were placed in mine with purpose. For their friendship, their support, and their sisterhood — I am deeply thankful.
And, of course, no gathering in my home is complete without Vesper and Mowgli. They made their rounds as usual, showering Jess with kisses and reminding us all that love, in its purest, most unconditional form, often comes with fur and four legs.
A Joy Worth Sharing
There’s always a moment when the dish hits the table and I hold my breath just a little. Cooking with friends is joyful, but it’s also quietly nerve-racking as the host — no matter how confident I feel, I’m always waiting for that first real reaction. This time, it came from Virginia. After one bite of the dumpling bake, she looked up, eyes wide, and said — with complete sincerity — "Honestly… just pour this sauce into a cup so I can sip on it like tea." We all burst out laughing! In that one line was everything I needed to hear: her enthusiasm, her creativity, and the pure delight of someone who truly loved what was on her plate. It was a moment of pure laughter and joy — and the reassurance every host hopes for!










This is absolutely beautiful on so many levels. As I’ve told you more than once, I’m grateful to know you - you’ve helped me see ways to grow in both my personal and professional life and be a healthier version of myself (still lots of work to do there - lol). I really admire your strength and openness. Change isn’t easy, but you’re stepping into it with so much heart. Cheering you on always! 🩵
